What kind of sage is burned in cleansing rituals?

I keep hearing people talk about this. I have no desire to do it, but just wondering, is this prairie sage or cooking sage? Seems like if it’s cooking sage your house would just smell like burnt dressing? Is prairie sage burned in Native American rituals?
